If you look around you, you will soon notice just how many aprons are in use today.  Different types of restaurants will utilize different types of aprons. The bistro can be either a half apron, skirt length or even go half way down the leg, depending on the choice of the bistro owner. The strings go all around to the back and in my cases  go entirely around again and be tied in the front. The waist aprons are similar to the bistro but generally are short. They are to protect your clothing but some will have front pockets which the wait person will use to place their order book or even the tip back.  So many uses for the apron.
